Making a healthy breakfast couldn’t be easier with these quick vegetarian breakfasts. These simple meal ideas which contain short ingredient lists and fresh, flavorful, and natural food will make these recipes a great choice for anyone. Each recipe makes 2-3 servings and will have you in and out of the kitchen quickly and easily.

- Fresh Fruit Skewers: This is a great take-along meal to eat at work or on-the-go. Place pieces of fruit of your choosing like, pineapple chunks, strawberries (halved), seedless grapes, mango chunks, and melon chunks, on wooden skewers, alternating fruit varieties. Dip the fruit pieces in something smooth and creamy like some low-fat plain yogurt mixed with some honey, a little lemon zest, and a sprinkle of cinnamon and nutmeg.

- Pesto Egg Sandwich: Take a two to three hard boiled eggs and slice each of them into a few lengthwise slices. Toast slices of whole grain bread. Take one slice of toast and spread with some spicy mustard and place a few egg slices on top. Add a slice of low-fat cheese of choice and some sprouts. Spread a thin layer of prepared basil pesto (and, if desired some fresh basil leaves for added basil flavor) on the other piece of toast and place on top of the sandwich.

- Pasta and Fruit: Take some leftover plain cooked pasta and combine it with some diced apples, canned and drained mandarin orange segments, dried cranberries, some cubed firm tofu, and chopped hazelnuts. Toss all ingredients with some plain low-fat Greek style yogurt. Drizzle with a little maple syrup, honey, or agave syrup if desired.
